Workout & Dinner! Mushroom, Cherry Tomatoes with Quinoa & Tempeh. My local super market finally sells Tallyho Tempeh. It is the best tasting thing ever. I’ve tried another brand and it’s gross. But I had to drive to a far off health store to buy it. So stopped eating it. So a lot happy about it being local. Dinner was amazing. Just yum. And workout was challenging. Feeling tired. AM Snack! It’s been awhile since I’ve had an AM snack as I’m never hungry enough. But making myself eat. I’m finding by the end if the day in my new job which is so busy I’m mentally spent and need to sustain my brain & body better by pacing my food out. Had one those nights where I slept really lightly, waking quiet a few times (fighting possums on the roof really didn’t help) and not getting solid sleep till 5am. I had intentions of waking at 6, but not after a sleepless night. Sleepless nights used to really bother me, I’d tell myself I couldn’t go to work because I didn’t get enough sleep. I’d keep myself awake more because of that worrying. But that was become too common and I couldn’t miss that much work, so I just used to fight through. I realized that I can get through the day okay. In fact I’d feel no different after an hour of being awake to when I get a full night sleep. So it stopped stressing me out during those sleepless nights & keeping me awake more. However a full nights sleep tonight would be great πŸ˜†β˜€οΈπŸŒˆ Happy Monday! #quote  #qotd

Morning Adventure! Bike ride starting down the killer hill from home (yeh we load the car up and drive & park just past the killer hill, it’s just too hard to even contemplate) and rode a new trail, bumping into the Eastlink Trail and then back onto Blind Creek Trail. All up with stops and breaks a 2hr ride (1.5hrs ride time). 18k/h pace is awesome too. Last weekend it was 16k/h in an hour πŸ˜€ it’s a really nice trail but the inclines following the freeway are insane (the three peaks on my pic). Esp in the heat. πŸ˜¬β˜€οΈ something to work towards anyway. Dinner!! Salmon and Tahini Zucchini Noodles with Kale & Pine nuts. This was sooooo much yum! I’ve never been a big pasta eater, I don’t actually miss it being low carb and not eating refined processed foods anymore, it also does nothing for me (as in I’m insta hungry 5mins later when I do have it) but it’s really nice to have an alternative to noodles with zoodles. And it’s crazy filling and sustains me a lot longer. Now if there was just something to substitute white & brown rice. Growing up on rice I can eat it endlessly. My go to meal while single was rice, tinned salmon and cheese. Yup.
